Missed me?

I know that my 2 followers have missed me so much.  Hey mom!  So I was thinking that I really need to start cooking.  I love it so.  My best gal pal got me an AWESOME present....Gourmet magazine AND julia child dvds.  AWESOME!  My hubby even said..."man I can't compete with Brooke".  It is so true she is awesome.  My new resolution is to start trying everything that recipegirl.com has.  Wish me luck.  It could get ugly  and expensive!  I have been a bit sickly lately but I am done..done I say with that.

feta and black bean dip

Feta Black Bean Dip


Serves 30 {and that’s not a typo, it makes a TON!}

1/2 cup sugar

3/4 cup apple cider vinegar

3/4 cup vegetable oil

3 {15 oz} cans of black beans, drained and rinsed

3 {15 oz} cans of Shoepeg corn, drained and rinsed

1 bunch of scallions, chopped

1 bunch of cilantro, chopped

1 {8 oz} block feta cheese, crumbled



Whisk sugar, vinegar and oil in a large bowl. Add the black beans, corn, scallions, cilantro, and feta and mix well. Chill until serving time. Serve with tortilla chips or corn chips.

Ingredients


Serves 4 to 6



•2 tablespoons olive oil

•1 medium onion, chopped

•3 garlic cloves, minced

•Coarse salt and ground pepper

•1 1/2 teaspoons dried thyme, or oregano

•1 can (28 ounces) whole tomatoes

•1 can (28 ounces) crushed tomatoes

•2 pounds store-bought ravioli

•1 1/2 cups shredded mozzarella cheese

•1/2 cup grated Parmesan cheese

Directions

1.Preheat oven to 425 degrees. Heat oil in a large saucepan over medium heat. Add onion and garlic, and season with salt and pepper; cook, stirring occasionally, until softened, about 5 minutes. Add thyme and tomatoes. Bring to a boil, reduce heat, and simmer, breaking up tomatoes with spoon, until sauce is thickened and reduced to about 5 1/2 cups, 20 to 25 minutes.

2.Meanwhile, cook ravioli in a large pot of boiling salted water just until they float to the top (pasta will continue to cook in oven). Drain pasta; return to pot.

Toss sauce with pasta. Pour pasta into a large gratin dish or 9-by-13-inch baking dish, and sprinkle with cheeses. Bake until golden, 20 to 25 minutes. Cool slightly before serving.



1st grader

I didn't cry!  Well, I got that lump in my throat but the tears didn't fall.  I am so proud of my boy.  He is going to his first all day class.  I don't even think he was that nervous which makes me really happy.  I did write on his sack I love you and he told me that people are going to think his mommy kisses him.  What???  He is only 6 and doesn't want his mommy.  Logan is home with me all day and so far he has.....
1.dropped a cherry coke bottle and it went all over the place including his hair
2.made a cake with me and got that all over him.  
But I have to say if he wasn't home with me I would miss him.  I love being a mommy!  NOW for that girl

curtains

So much stuff going on this week.  I am an emotional rollcoaster!  Blaine starts 1st grade and I am more nervous for him then he is.   Brooke had her baby girl yesterday and my nephew is coming sometime today.  Oh and dreaded birthday is Saturday.  I have already had some awesome presents.

I made these curtains last week.  I just found a design I liked and traced the whole thing on the curtain.  Then I just painted it.  I really like it.  I am wanting to make my dining area a little cozier since we don't use it as a dining room.

$1 of fun

I went to the Dollar Tree yesterday and got the boys some shaving cream.  You would not believe how much shaving cream is in that can.  It filled a whole bucket and then some.  Logan and Blaine had a blast!

It's Monday so why not show another one of my Logi bear's outfits.  Bless his heart he is always dressing up in something.  This isn't just something he does every now and again...he does this everyday.

Don't worry his 409 bottle is just water.

baby shower again

Here are 2 more pics of the baby shower.  I wanted to take more but I felt stupid walking around with my camera.  Her house is so beautiful I just wanted to take pics everywhere.  By the way my camera is awful so the pics are not the greatest.  I would love to just take my mom's professional camera.
Summer t ball is over with.  Ugh that means school is coming soon.  I love t-ball and really enjoy watching those little guys and gals playing.

Brooke's baby shower

Brooke's baby shower was last Saturday.  Good times and she got a lot.  So happy for her.
Hooray it is Monday.  I like Mondays because I can look at all my blogs from over the weekend.  So here on some pics of the food I made for the blog.  Not great but I tried. :)  The veggie tray did not have that plastic container in it during the party.  The dip was put into a glass bowl.  It was very good dip too!

greedy

I hate feeling like I always want more.  Greedy me...I want a new house...I want new clothes...I want new curtains......   I want....  Sometimes it gets me down thinking about all the stuff I want but can't have.  I am blessed at everything I have but sometimes I see other people with more and I want more.  BLAH  I chose to stay at home my boys and not have a job so I need to just shut it.  Poo Party for me today.
