tried out the pizza

I planned on doing a lot of cooking this weekend but it really didn't happen.  I did make the artichoke pizza bites.  They were ok but I don't think the crust was the best.  It was pillsbury and I think if I used a different kind it would have turned out way better.  I didn't have a stone pizza pan either....I think my mom should get me one huh 

On another note one of my favorite blogs called "It's in the details" asked the question what would you do if you were stuck in target all night.  I believe there is an awesome movie from the 80s about this.  I really hope to be stuck in Target and then find $3000 on the floor (and of course no one claims the money).  I could do some damage!

I am reading Tori spellings latest book.  Now I know she cheated on her first husband and all that but I can't help but really like her.  I mean I really like her a lot.  I think we could even be friends.  I love the way she plans parties which is totally the way I dream to plan parties if I had money.  She takes snack day at her sons school very seriously and makes everything homemade.

BABY SHOWER NUMBER 2

So my bff Brooke is having a sweet baby girl named Mallory.  Brooke has a blog to so if you have time check it out.  She is the one that is super talented.  http://brooklyn924.wordpress.com/ 

Brooks shower is in a few weeks and I have the honor of making the food for it.  Brook is a little picky in what she eats (sorry Brooke lol)  So far I know she likes Moes mexican, little smokies, quiche, fruit, vegetable tray, and muffins.  The shower is at 11am and we don't want really breakfasty food but more brunch....so if anyone has any ideas please let me know.  That means my 2 readers please give me suggestions.  Thanks everyone.

EASY ARTICHOKE PIZZA BITES

14 ounce can artichoke hearts packed in water, drained & chopped

½ cup pitted ripe olives, sliced

½ cup (2 ounces) grated fresh Parmesan cheese, divided

zest from 1 lemon

1/3 cup mayonnaise (low fat is okay)

1 clove garlic, minced

13.8 ounce package refrigerated pizza crust

2 medium Roma tomatoes, thinly sliced and then cut in half

1 tsp Italian seasoning



1. Preheat oven to 425°F.



2. In a medium bowl, combine artichokes, olives, ¼ cup cheese, lemon zest, mayonnaise and garlic; mix well.



3. Unroll pizza dough and arrange on large round baking stone, shaping into a circle. Using a lightly floured rolling pin, roll dough to edge of baking stone. Spread artichoke mixture evenly over crust to within ½-inch of edge. Arrange tomato slices over pizza; sprinkle with Italian seasoning mix and remaining cheese.



4. Bake 20-25 minutes or until cheese is melted and crust is golden brown. Remove from oven; let stand 10 minutes. Cut into squares using a pizza cutter; serve immediately.

CHICKEN & SHRIMP WON TONS W/ CHILI SWEET & SOUR SAUCE
(no need to make the sauce if you go to the Asain store and buy it)

WONTON FILLING INGREDIENTS:

¾ lb raw chicken, diced

¾ lb shrimp, diced

2 Tbs diced green onions

1 Tbs minced fresh cilantro

1 tsp minced garlic

1 tsp fresh gingerroot, minced

1 whole serrano chili, seeded & minced

1½ Tbsp soy sauce

1 Tbsp sherry

1 tsp cornstarch

1 tsp sesame oil

1 tsp crushed red pepper

dash of salt & pepper

pinch of granulated sugar

2 packages square won ton wrappers

oil for deep-frying



SAUCE:

½ cup ketchup

½ cup water

¼ cup distilled vinegar

¼ cup granulated sugar

1 Tbs chili garlic sauce

dash of soy sauce

½ tsp sesame oil

1 tsp garlic, minced

1 tsp fresh gingerroot, minced



1. Mix together all won ton filling ingredients. Refrigerate at least 1 hour or overnight.



2. When ready to prepare, place 1 heaping teaspoon of filling in the center of each won ton wrapper. Tuck in the sides to seal in filling. Place on lined baking tray. Place in refrigerator for 1 hour.





3. Prepare sauce: In food processor, puree all sauce ingredients. Pour into a heavy saucepan and bring to a boil, stirring constantly until thickened. Keep warm until ready to use.



4. Deep fry won tons in oil until golden and serve with prepared Chili Sweet and Sour Sauce.



Servings: 15

asian market

The other day I went to the Asian market and the best time.  I brought my little boys and they were not having as good of a time.  I could stay all day looking around.  This little sauce is called sweet chili sauce.  I love it!  I ate it with my eggrolls but I am going to try it with chicken tomorrow.

Eggrolls

I made some eggrolls the other night and I must say
!!!  I will let you know somewhat of the recipe but I made it up.  My mom says that is the sign of a good cook...I hope it means I am!  So here is what I did.

I fried some ground turkey with garlic.  I cut up about 2 garlic cloves.  Then I put some cut up onions in there and some thinly sliced carrots.  I added about a cup of water and let the vegetables cook.  I let the mixture cool.  The pictures will show you the rest.  I have to be honest my hubby and I ate the ones that were done before taking the final picture.  Sorry!

salad

serves 4




ingredients



1 ear corn (husk and silk removed; tip cut off)

2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)

1 avocado, halved, pitted, peeled, and diced

2 scallions, thinly sliced

2 tablespoons fresh lime juice

1 tablespoon vegetable oil, such as safflower

coarse salt and ground pepper



directions



stand ear in a large wide bowl; with a sharp knife, carefully slice downward to release the kernels. discard cob.

add tomatoes, avocado, scallions, lime juice, and oil to bowl.

season with salt and pepper, and toss gently to combine.

So my hubby and I made our head board to our bed.  I love it.  It really wasn't that expensive either!

Hello friends!  I bet you have missed me huh?  Well I am back.  I have some pics of the hail storm that was like 2 months ago but hey better late then never right?  This hail storm did some damage to our house.  We had 40 holes that went through are decking.  My car is in the shop getting fixed now with over $5,000 in damage.

Happy 4th of July

I ended up having a very good 4th July despite the rain.  We went to my brothers house where they shot off a ton of fireworks.  My little one (logi bear) was in the house with an ipod in his ears so he wouldn't hear the bangs.  Poor guy :(  He is not much into loud noice.  So I have been thinking if I am going to be the next Julia Child (yes I still have this dream) then I need to be getting my booty busy.  I am looking hard for the money to go to a Culinary School.  I really need to be trying hard on this catering thing too.  Oh and there is a new channel called COOK and guess what????  IT PLAYS OLD JULIA CHILD SHOWS.  Love it!
