Cookie pie

The pic is from Our best Bites Blog. I made this the other night and it was really yummy! Here is the recipe from Nestle


Ingredients
1 unbaked 9-inch (4-cup volume) deep-dish pie shell *
2 large eggs
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 cup (1 1/2 sticks) butter, softened
1 cup (6 oz.) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup chopped nuts
Sweetened whipped cream or ice cream (optional)
Directions
PREHEAT oven to 325° F.

BEAT eggs in large mixer bowl on high speed until foamy. Beat in flour, granulated sugar and brown sugar. Beat in butter. Stir in morsels and nuts. Spoon into pie shell.

BAKE for 55 to 60 minutes or until knife inserted halfway between edge and center comes out clean. Cool on wire rack. Serve warm with whipped cream, if desired.

Valentine's Day box LOVE BOAT

Another snow day for us today so we made use of it and made Blaine's v-day box.  Blaine helped me a lot on it but I did a lot of the cutting.  He did a lot of the pasting.  We made it out of a converse shoe box.  Fun times!

Servings: 16 slices • Serving Size: 1/2 inch slice • Old Points: 2.5 pts • Points+: 3 pts

1 cup mango purée (about 2 ripe mangos)

1 cup all purpose flour

1 cup unbleached whole wheat flour

1/2 cup sugar

1 tsp baking soda

1/4 tsp cinnamon

1/2 tsp salt

1/4 cup chopped walnuts

1/4 cup coconut flakes

1 large egg, beaten

2 tbsp melted butter or margarine

Preheat oven to 325°. Puree mango in a blender until smooth.



Combine flour, sugar, baking soda, cinnamon and salt in a large bowl. Mix well. Add nuts and coconut and mix to combine. In a medium bowl, mix eggs, melted butter and puréed mango. Add to the flour mixture and stir until just blended. Pour batter into a large 9x5 inch loaf pan and bake at 325° for 45-55 minutes, or until a toothpick inserted in the center comes out clean. Cool for about 10 minutes. Remove loaf from pan and let it cool before slicing
